Eggless Chocolate Fudge Cake : Pressure cooker special

INGREDIENTS:
All purpose flour: 1 ½ cups
Powdered sugar: 2 cups
Cocoa powder: 4 tbsp
Milk: 2 tbsp
Cold water: 200 ml
Baking powder: 1 ½ tsp
Baking soda: 2tbsp
Oil: 4 tbsp
Salt: pinch
Chocolate essence (optional): 2 tsp
PREPARATION:
* Sieve flour, cocoa powder, powdered sugar,
salt, baking powder and soda in a bowl. Mix well.
* Now add in wet ingredients (essence, oil,
milk, cold water). Fold in the batter well to a thick consistency
* Grease a pan with oil. Now pour in the cake batter.
* In a pressure cooker, place a central stand or
invert a box and place the pan on top of inverted box or stand. Bake it without
whistle.
* Bake until knife comes out clean when inserted and
taken out.
* This process will take maximum 40 minutes. cake can
then be served plain or with icing on it.
NOTE:

1. After adding dry
ingredients mix the batter gently to get better result.
2. Adding instant coffee or brewed
coffee will enhance the smell and taste of cake but never add too much. It may
cause slight bitterness.
3.
Mashed bananas is the best substitute for eggs. Each egg can be substituted
with 2 or 1 1/2 bananas.
4. Tastes best when served with vanilla ice cream and chocolate sauce.
